A staple of our production cycle is Saucisson Nostrano. Meaning "Local" or "Home Made", this simple cured sausage is flavoured with garlic, white wine, black pepper, and honey.
Usually made from Beef Eye of Round, Bresaola is a simple, delicious whole muscle cure. We use alpine spices and a white wine wash to give our Bresaola a light flavour allowing you to taste the beauty of the grass fed Beef we use.
One of our first forays into the amazing world of Salami is our Milano. Using Herbs and Red Wine, we introduce a fermentation culture and allow it to grow in the Salami for up to 24 hours before allowing it to hang and dry for over a month. Simple and studded with cubed Lardo, Salami Milano is perfect for any charcuterie board.
