Our fresh bacon is simple. Dry rubbed and air dried, we avoid pumping any extra liquid in it and cold smoke each side for 3 hours. What results is a concentrated flavour of pepper and smoke!
Our hams are brined for over a week to really take on as much flavour as possible. They are then smoked and baked to give them an amazing smokey, caramelized finish.

Brined and smoked, these delicious bad boys bring any soup up at least two levels. These beautifully caramelized pieces of pork are incredibly tough and do require a long cook time to make them moist and tender. Our recommended use is in soups or braised on their own for at least 4 hours to be pulled.
